Our take on egg mayonnaise and one which is a particular favourite of one of our diners, who it's named after:
(Makes 4 sandwiches)
8 hard boiled eggs
8 tablespoons mayonnaise
8 tablespoons tomato ketchup
(So, one tablespoon of each per egg to make a Marie Rose sauce)
1 tablespoon mustard
1 tablespoon Worcester sauce
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon hot paprika
Mix and mash it all up and serve in sandwiches, with salad leaves or watercress; or on its own.
