From the Restaurant at Home cookbook
A variation on our southern fried chicken recipe:
(Serves 4)
Method 1
You will need:
8 tablespoons mayonnaise
2 tablespoons English mustard
2 tablespoons runny honey or golden syrup (optional)
2 tablespoons hot paprika or chili powder
1 tablespoon powdered garlic
8 pieces chicken (thighs, drumsticks or breast)
Puffed rice breakfast cereal (We can't mention brand names but the one which rhymes with "Nice Whiskies" for example), crushed
Then you need to do this:
Combine the mayonnaise, mustard, honey / syrup (if using) and powders.
Coat the chicken pieces in the mixture you just made
Coat the already coated chicken pieces in the puffed rice
Bake in an oven at 190c for 25-30 minutes.
The wet coating will keep the chicken juices in and the puffed rice with provide a crunchy outer coating
